VITICULTURE & VINIFICATION

This cuvée is made from our oldest vines, about 50 years old. The grapes are harvested very early in the morning to preserve freshness. The clusters are destemmed, crushed, and the wine is cold-macerated for two days. Fermentation is carried out using indigenous yeasts. The maceration lasts about four weeks with regular pump-overs and rack and returns. The wine is aged on fine lees for 24 months in concrete tanks.

TASTING NOTES

Beautiful garnet red color. The aroma is complex, blending notes of red fruits, spices, and garrigue: thyme, bay leaf. The palate is generous, with fine and silky tannins. Nice length in the mouth. A delicious and elegant wine.

Fermentation takes place in temperature-controlled stainless steel tanks with indigenous yeasts. The wine is rested during winter and bottled in spring.

TASTING NOTES

The color is a delicate pale pink with salmon notes. The aroma is elegant with floral and fruity notes. The palate is rich with a nice tension and flavors of citrus and small red fruits.
